Feta cheese & spinach

2 lbs. fresh spinach leaves2 garlic cloves, crushed
2 shallots, finely chopped
Juice of 1/2 lemon
1/4 teaspoon dried thyme
1/4 teaspoon grated nutmeg
Salt
Freshly ground pepper
2 cups feta cheese
Oregano leaves, to garnish

Rinse spinach leaves and place in a saucepan. Cover and cook 1 or 2 minutes or until just wilted. Leave to cool. Place spinach in a food processor or blender and puree until smooth.Add garlic, shallots, lemon juice, thyme nutmeg, salt and pepper and blend until well combined. Transfer the spinach mixture to a saucepan and bring slowly to a boil. Simmer 5 minutes, stirring.
Crumble feta cheese and stir into sauce just before serving. Garnish with oregano leaves and serve with freshly cooked fusilli.
Variation: Use 1 lb. frozen spinach, in place of the fresh spinach. Defrost and puree as with fresh spinach.
