Знадоби

6-7 pounds chicken (2)

1 tb. spoon + 1.5 teaspoon salt

0.25 cup lemon juice

0.25 cup lime juice

1 cup plain yogurt

4 cloves of garlic, quartered

1 teaspoon cumin seeds

1 teaspoon ground coriander

0.5 teaspoon turmeric

1 tb. spoon cayenne pepper

0.5 teaspoon black pepper

0.25 teaspoon cinnamon

large pinch ground cloves

1 teaspoon liquid red food color

Garnishes

long green chili peppers

1 large sweet onion

1 tb. spoon veg. oil

fresh coriander springs

lemon and lime wedges

Як готувати

Rince chicken and pat dry. Cut up. Remove as much skin as possible. Slash piece for better marinating.

Place chicken in a large bowl. Sprinkle with salt, add lemon and lime juices, toss and set aside for 30 min.

Blend yogurt, garlic, spices. Pour over chicken. Cover with plastic wrap and refrigirate at least 24 hours.

Preheat oven 400F. Place chicken on oiled rack and bake for 20-30 min. Bake the peppers alongside.

Cut up onions and cook until browned but still crisp.

Before grilling / bakin dab red color on the chicken.

To serve, place chicken on a large serving plate. Garnish with the onions, grilled peppers, coriander, lemon and lime wedges.
