310g (2,5 cups) self raising flour

2 teaspoon ground cinnamon

21 teaspoon ground numeg

150g. (3/4 cup) dark brown sugar

200 g. (1 1/3 cups) grated carrot

4 eggs

250g (1 cup) sour cream

250 ml (1 cup) vegetable oil

Orange cream cheese frosting:

60 g (1/4 cup) cream cheese, softened

20 g unsalted butter, softened

1 teaspoon grated orange zest

2 teaspoon orange juice

125 g (1 cup) icing sugar

Preheat the oven to 160 C (Gas 2-3). Grease a deep 22 cm round tip and line the base with baking paper. Sift the flour and spices into large bowl, then stir in the brown sugar and grated carrot until well mixed.

Combine the eggs, sour cream and oil until lightly beaten. Add to the carrot mixture into the prepared tin and smooth the surface.

Bake for 1 hour 15 min. , Or until a skewer comes out clean when inserted into center of cake. Leave in the tin for 10 min before turning out onto a wire rack to cool

To make the frosting, beat the cream cheese, butter, zest and juice in a bowl with electric beaters until light and fluffy. Gradaully beat in the icing sugar, until smooth. Spread over the colled cake.
