Courgette and herb omelette

4 medium egg (s), lightly beaten2 portion egg white
1/3 pint skimmed milk
2 medium courgette, ends trimmed, coarsely grated
2 portion shallots, peeled, thinly sliced
2 teaspoon fresh chives, chopped
2 teaspoon parsley, coarsly chopped
40 g medium-fat soft goats cheese, crumbled
2 tablespoon sour cream

* Beat eggs and egg whites together in a bowl with milk. Season with salt and pepper.* Spray a medium non-stick frying pan with low fat cooking spray and place over medium heat. Add half courgette, shallots and herbs and cook, stirring for 1 minute.
* Add half egg mixture and cook for 1-2 minutes or until omelette is set and golden underneath, tilting pan to cover base with egg mixture.
* Sprinkle with half of cheese, and fold one side over to enclose. Slide onto a serving plate and keep warm.
* Repeat with remaining omelette ingredients to make another omelette.
* Sprinkle each omelette with cracked black pepper and top with sour cream and a little extra parsley. Serve with a green salad.
Notes
* You could also serve with Ciabatta, but do not forget to add the extra POINTS values.
