3 tablespoons blanched slivered almonds
2 tablespoons unsweetened cocoa powder
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon instant espresso powder
2 large egg whites
1/8 teaspoon salt
1/2 cup sugar

1. Preheat the oven to 350 °. Spray 2 large baking sheets with no-stick spray- set aside.2. Place the almonds in a jelly-roll pan and toast for 5 to 8 minutes, or until lightly browned. Remove the pan from the oven and finely chop the almonds- leave the oven on.
3. In a small bowl, combine the chopped almonds, the cocoa powder, flour, cinnamon and espresso powder- set aside.
4. In a large bowl, with an electric mixer at medium speed, beat the egg whites and salt until foamy
5. With the mixer at high speed, gradually beat in the sugar until stiff peaks form and the mixture is glossy. Stir in the almond-cocoa mixture until well combined.
6. Drop the meringues by rounded teaspoons onto the prepared baking sheets. Bake for 10 to 12 minutes, or until the meringues are set. Remove the meringues to wire racks to cool.
