* 115g Stale White Bread, crusts removed, torn into bite-sized pieces
* 3 tbsp Olive Oil, plus extra to garnish
* 2 tbsp Red Wine Vinegar
* 1 Onion, roughly chopped
* 3 Garlic Cloves
* 1 Red Pepper, deseeded and chopped
* 5 Tomatoes, skinned and deseeded
* 1 Cucumber, peeled, deseeded, and chopped
* 1 pinch Salt
* 1 pinch Black Pepper, freshly ground
* 2 Hard-Boiled Eggs, chopped
* 2 slices Serrano Ham, cut into strips

A fresh soup from southern Spain, similar to Gazpacho.Instructions

Place the bread into a bowl. Add the oil and vinegar, mix well, and set aside to soak for 10 minutes.

Place the onion, garlic, red pepper, tomatoes, and most of the cucumber in a blender or food processor with 90ml (3fl oz) water, and blend to a pur # 233-e. Add the bread mixture, blend again, then season to taste with salt and pepper.

Chill for at least 30 minutes, pour into serving bowls, and top with hard-boiled eggs, strips of ham, and the remaining cucumber. Serve, drizzled with a little olive oil.
