Salted caramel banana cream pie

1.5 cups plus 1 tablespoon all-purpose flour
1/3 cup ice-cold water
1 stick plus 3 tablespoons cold butter
1/2 teaspoon salt
Chocolate Layer
1 cup heavy whipping cream
4 oz bittersweet chocolate
4 oz white chocolate
1 teaspoon vanilla extract
Salted Caramel Layer
1/3 cup water
1 teaspoon salt
1 cup granulated sugar
1/4 cup dark brown sugar
1 stick butter
2/3 cup heavy whipping cream

тісто:Cut butter into 1-inch cubes.
Using a food processor, add flour, salt and butter and pulse until large balls form. The butter chunks should be visible and about the size of small marbles.
Add cold water and pulse until the dough comes together but not completely. You should be able to form the dough very easily (try pressing some of the separate pieces together).
Flour a working surface and form a large dough ball. Divide into two round disks about 1-inch thick. Wrap tightly in plastic wrap and chill overnight.
Roll out dough disk onto a floured surface large enough to cover a 10-inch tart pan. Press into pan and trim excess. Place a round of parchment paper on top of the crust and cover with pie weights.
Bake at 375 F for 20 minutes. Remove parchment and weights and return to oven for 3 minutes.
Cool completely.

Chop chocolate finely and place in a heat-proof bowl.
Heat cream and vanilla extract over medium heat until it reaches a boil.
Pour cream over chocolate and stir with a spatula until chocolate melts.
Cool to room temperature and pour over cooled crust. Place in refrigerator.

Over medium-heat, dissolve sugar and salt into water in a heavy-bottomed pan.
Add butter and bring to a boil. Cook until mixture is golden brown, about 7 minutes.
Add cream slowly and and whisk until incorporated. Lower heat and whisk continuously for 15 minutes until consistency is thick.
Cool to room temperature, about 1 hour.
Spread onto chilled chocolate later.
