Ingredients3 Larry's Own mild Italian sausages, cut in half-inch slices
2 sweet onions raw, thinly sliced
1 red bell pepper raw, cut into half-inch strips
3 Tbsps. garlic, finely chopped
1 cup Columbia Crest dry white wine
1 red chili pepper, finely diced
1/4 tsp. cayenne pepper
2 bay leaves
1 lb. Muir Glen crushed tomatoes, in puree
1 carrot raw, cut into 1/4 inch cubes
2-1 / 4 lbs. Manila (small sized) clams, rinsed and scrubbed

InstructionsHeat large pot over medium-high heat, add sausage and saut for one minute, then add onions and cook for another seven minutes. Then add red peppers and garlic and cook for 3 minutes. Add white wine, red chili pepper, cayenne, bay leaves and tomatoes, bring to boil and cook for 5 minutes. Finally, add clams and carrots, cook for 7 to 8 minutes. Note: Discard bay leaves and any clams that do not open
