Bran muffins

Знадоби

1 large egg or 1/4 cup egg substitute

1/4 cup sugar

1 3/4 cups nonfat milk

1 1/2 tablespoons margarine, melted

2 cups all-bran cereal (shredded type, not flakes)

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

Як готувати

1. Preheat the oven to 400 degrees F.

2. Prepare a 12-cup muffin tin with nonstick pan spray or line the muffin cups with paper liners.

3. Beat the egg in a medium bowl.

4. Add the sugar, milk, and margarine- beat well.

5. Stir in the bran.

6. Allow to stand 2 minutes for the bran to soften.

7. Sift the dry ingredients together into a small bowl- add to the bran mixture.

8. Stir just until blended.

9. Divide the batter amoung the 12 muffins cups- each will be about 2/3 full.

10. Bake 20 to 25 mintues, until a toothpick inserted in the center of a muffin comes out clean.
