Bulgur & chick-pea pilaf

1 cup medium-coarse bulgur1 cup canned vegetable broth diluted with 11/2 cups water, or 21/2 cups homemade broth
1 can (15 ounces) chick peas, rinsed and drained
2 large plum tomatoes, diced
1 small cucumber, peeled and diced
2 scallions, thinly sliced
1/4 cup chopped fresh mint
2 TB organic extra virgin olive oil
1/2 tsp salt
1/4 tsp pepper

In a medium saucepan, combine bulgur and broth and bring to a boil over high heat. Reduce heat to low, cover, and simmer 15 minutes, or until bulgur is tender and liquid has been absorbed.Transfer bulgur to a serving bowl and stir in chick peas, tomatoes, cucumber, scallions, mint, oil, salt, and pepper.
