Lebanese spinach

Place olive oil and garlic in a large pot with a tight-fitting cover. Set over medium heat and cook for about 3 min. or until garlic starts sizzling. Place the spinach on top. Sprikle with salt and pepper. Cover tightly, reduce the heat to medium low and cook for 15-20 min. until the spinach is wilted. Stir gently, discard garlic. Drain and serve.
