Red cabbage pickled with apple and raisinINTRODUCTION
I love fresh cabbage salad, but, unfortunately, the cabbage sold here, lacks crunch and juiciness. So, I always try to combine it with something to add more flavour and texture.
• 300 g red cabbage
• 1 apple (150 g)
• 100 ml raisin
• salt, freshly ground pepper, pinch of salt
BRINE
• 1/2 - 1 tsp honey
• 2 tbsp rosemary vinegar (any other flavour to your taste)
• 50 ml vegetable oil
# 9702-Shred the cabbage, sprinkle with sugar to mix. Using your hands press it until wilted.
# 9702-whisk all the ingredients for the brine
# 9702-julienne the apple and mix with the cabbage
# 9702-cover the cabbage with brine and let it chill overnight in the fridge to serve sprinkle with the raisin
THOUGHTS and IDEAS
I make this salad very often as a garnish to meat or fish dishes. I use rice vinegar, would be very good with apple or raspberry vinegar. I add raisin together with apple, also sometimes use currants, cranberries, blueberries ... The longer it pickles the testier.
