Walnut bread

Unbleached bread flour 2 to 2.5 cupswhole wheat flour 3/4 cup
rye flour 3/4 cup
fine sea salt 2 1/4 teaspoons
instant yeast 1/2 teaspoons
Water 1 cup plus 3tablespoons
walnuts 1 3/4 cups
cornmeal for baking sheet

place flours, salt, yeast in food processormeasure 1/2 cup of active starter and pour into processor.
pour 130 degrees F all but 2 tablespoons of water in FP. Mix for 20 sec.if needed add remaining 2 tbof water
Stop and let dough sit for 5 min.
Then process for 25 sec.
Scrape dough on lightly floured surface, cover with plastic and let rest for 15-20 min.
Sprinkle walnuts and knead for 2 min.
place in large bowl fro 2 січня / 2-3 hours.
Roll into football shape loaf.
Let proof 45 min.
PLace small pan of water and preheat oven to 475.
Lightly dust pan with cornmeal.
Slash lightly loaf with razor.
pour about 1 more cup in oven.
Turn heat to 425. Bake for 35-40min.
