Greek spinach pie

2 lb. fresh spinach1 bunch green onions
1 container feta cheese
1 1/2 c. cottage cheese
Mint and parsley
Salt and pepper
1/2 lb. butter, melted
2/3 c. oil
4-5 eggs
1 lb. phyllo dough (Greek pastry sheets)

Wash spinach and drain overnight. Melt butter and skim off salty foam. Add to oil. Chop spinach, onions, mint and parsley fine. Beat eggs slightly. Add cheeses to eggs and mix, adding salt and pepper to taste. Mix spinach mixture and egg and cheese mixture together.Use oil and butter mixture to coat bottom and sides of 10x15 inch baking dish.
Place 6 sheets of phyllo dough in dish, brushing a coating of oil and butter mixture between each sheet. Allow extra length of sheets to hang over edge of dish. Pour spinach and egg and cheese mixture over dough and repeat placing 6 more sheets of phyllo dough on top, again brushing with oil and butter mixture between sheets.
Tuck dough hanging over edges of dish down sides to make extra-thick outer crust. Bake at 350 degrees for 40-60 minutes or until golden brown.
