for 4-6serves:4 red peppers, seeded7choped
1 large onion, chopped
1 tbsp olive oil
1 garlic clove, crushed
1 small red chilli, sliced
3 tbsp tomato puree
900 ml chicken stock
finely grated rindjuice of 1 lime
salt / pepper

cook the onionpeppers gently in the oil in a covered sauspan for about 5 min, shaking pan occasionally, until softened.Stir in garlic, then add chilli with tomato puree.Stir in half the stock then bring to boil.Cover the pan simmer for 10 min.Cool slightly, then puree in a food processor.Return to the pan, then add the remaining stock, the lime rind juice and seasoning.Bring the soup to the boil, then serve at once with strips of lime rind scattered into each bowl
