2 glazed pineapple rings.125g glazed apricots.
100g glazed cherries (red).
100g glazed cherries (green).
250g brazil nuts.
250g pecan nuts.
125g almonds.
250g dried dates.
100g brown sugar.
50g plain flour.
35g self-raising flour.
90g butter, softened.
2 free-range eggs.
2tbs rum.
1 vanilla pod.

-Pre heat oven to gas mark 3 (325F, 170C).-Grease and line a loaf tin with baking paper.
-Chop all the fruit and nuts to the size of brazil nuts, or smaller if preferred.
-Beat eggs until creamy while adding the vanilla seeds, rum, butter and sugar.
-Mix in the fruit, nuts and sifted flours.
-Pour mixture into the tin and bake for up to 2 hours.
-Allow to cool, wrap in cling film and store for up to 3 months.
The types of fruit and nuts can be changed to suit your taste.
