Pirouettes are made by rolling warm cookies over the handle of a large wooden spoon or a 1/2-inch wooden dowel. The secret is to bake and roll just 2 or 3 cookies at a time. The elegant flutes may be served plain or try filling them with delicately sweetened and flavored whipped cream just before serving, so that they remain crisp.Preheat the oven to 350 ° F. Grease the baking sheets or line them with aluminum foil. In a medium saucepan over medium heat, melt the butter, molasses, and sugar. Remove from the heat, sift the flour, salt, cinnamon, ginger, and cloves over the molasses mixture- blend well. Place the saucepan over the lowest heat possible to keep the dough warm or it will become too thick to use properly. Drop the dough by rounded teaspoonfuls 3 inches apart on the prepared baking sheet. The cookies will spread.
Bake in the center of the oven for about 7 to 8 minutes, or until bubbly. Let the cookies cool on the baking sheet for exactly 1 minute. The first cookie will be quite hot. Roll the cookie around a wooden spoon handle, overlapping the cookie to make a cylinder, and press down on the seam for a few seconds to seal the shape. Let the cookies cool on a wire rack. Repeat with the remaining cookies. Store in an airtight container.
