Pirouettes are made by rolling warm cookies over the handle of a large wooden spoon or a 1/2-inch wooden dowel. The secret is to bake and roll just 2 or 3 cookies at a time. The elegant flutes may be served plain or try filling them with delicately sweetened and flavored whipped cream just before serving, so that they remain crisp.

Preheat the oven to 350 ° F. Grease the baking sheets or line them with aluminum foil. In a medium saucepan over medium heat, melt the butter, molasses, and sugar. Remove from the heat, sift the flour, salt, cinnamon, ginger, and cloves over the molasses mixture- blend well. Place the saucepan over the lowest heat possible to keep the dough warm or it will become too thick to use properly. Drop the dough by rounded teaspoonfuls 3 inches apart on the prepared baking sheet. The cookies will spread.

Bake in the center of the oven for about 7 to 8 minutes, or until bubbly. Let the cookies cool on the baking sheet for exactly 1 minute. The first cookie will be quite hot. Roll the cookie around a wooden spoon handle, overlapping the cookie to make a cylinder, and press down on the seam for a few seconds to seal the shape. Let the cookies cool on a wire rack. Repeat with the remaining cookies. Store in an airtight container.
